Recipe: Homemade Snickerdoodle Muffins

Once again I was perusing Pinterest as if I had nothing else better to do and I stumbled across this recipe for Snickerdoodle Muffins. I’ve had the cookies before but the muffins… the muffins are a whole different world of goodness!

Instructions & Ingredients

 ½ Cups Flour
1 ½ tsp Baking Powder
½ tsp Salt
½ Cup Sugar
¼ tsp Nutmeg
1 Egg
½ Cup Milk
1/3 Cup Melted Butter

The Topping
¼ Cup Melted Butter
¼ Cup Sugar
½ tsp Cinnamon

Mix all of the dry ingredients first. Then add in the egg, milk and melted butter. Do not over mix. The batter will be a bit lumpy but that’s ok. Fill a muffin or cupcake pan half way and bake for 20 mins. The recipe as is makes 10 muffins.

While the muffins are cooling melt the butter in a dish and in a separate dish mix the cinnamon and sugar together.

Once the muffins have had a chance to cool a little dip just the top of them into the melted butter then swirl into the Snickerdoodle mixture and you're done!

I kept the recipe as is with the exception of a couple of things. 1. I had to double the recipe since my family is so big and 2. I didn’t dip the muffins in melted butter before dipping them in the topping mixture. I spread the butter across the top and then dipped them in the mixture.

These are not only easy to make but they’re really fast too! So if you’re looking for a quick treat for the family definitely try these!
