My kids are really strange. One day they're asking for the most fattening dessert possible. I mean chocolate cake, filled with chocolate, smothered in chocolate on top of chocolate. Then they're asking for something healthy. I think my logic has rubbed off on to them. In my mind if I eat a ton of junk it's ok because a few salads and an apple will balance it all out. This past weekend Nikki asked me to make her a fruit and yogurt parfait for her birthday breakfast. I was completely shocked because I know for my birthday I don't want anything that looks or smells healthy. However this is what I made. It's so easy the kids can do it themselves.
Plain Yogurt (Of course my store only had Vanilla)
Your fruit of choice (I went with Strawberries and Blueberries)
In a bowl or cup Place a small amount of yogurt (about 1/3 of the way).
Next sprinkle a bit of Granola. I happen to love Bare Naked Granola and their Trail Mix. The Granola I chose is very similar to trail mix because it has nuts and dried cranberries in it.
After the granola you'll add your fresh fruit.
Repeat the layers one more time and you're done.
There you have it! A quick and easy fruit and yogurt parfait. These are perfect for days you're craving something sweet but don't want the guilt of a a dessert with a ton of calories.
